banana bread & burns

Tonight I made my first homemade banana bread loaf and muffins.

I mushed up old bananas. I sifted flour. I chopped up pecans. And I added about 5 or 6 other ingredients that the recipe called for. It was simple really.

And then I burned my arm on the pan.

As much as it hurt for about 3 hours, I kind of like the idea that I might have a scar to remember my first banana bread making experience.

Is that weird?

(note: I should never make banana bread again. - can't. put. it. dowwwwwwn.)

p.s. - does anyone have any tips on how to make banana bread less crumb-y? (no pun intended.)

I think if I have mastered one recipe it has to be banana bread.I have looked at many recipes online but the best ones include 4 bananas, and i often put a splash of cream for more moisture. Another tip is to know the best time to take it out. When you check to see if it's done your skewer shouldn't come out too easily. If you stop the cooking process a bit before they tell you to then you will get a moister cake.

P.S. If you want to find a healthier recipe that is still moist look for one that includes oil and you can add some flax or hemp seed for some fibre.
